The head cook, Kevin Frei, purchased the meat to mix into beef chili.

The school wound up firing their head cook and promising parents they'd never serve kangaroo again.

On Oct. 10, a Potter-Dix Public Schools cafeteria served a chili including a mixture of beef and kangaroo meat, according to the release.

Williams said in a Wednesday letter to parents that head cook Kevin Frei at the Potter school told him he'd augmented the chili's beef on October 10 with kangaroo meat because it is lean and nutritious.

Williams added that Frei was quick to provide both him and the Nutrition Services office of the Nebraska Department of Education with nutrition information on the marsupial's meat. Even there, though, getting consumers to enjoy kangaroo meat is complicated by their "status as pest, resource and national symbol", according to an Australian report on commercial harvesting of the animal. Parents received notification about the incident a week after the meal was served.

According to KSID Radio, Frei was sacked from the school district this week.

The superintendent sent a letter to students and parents on Wednesday saying that while he didn't think kangaroo meat was "unhealthy or dangerous", he didn't approve of Frei's choice to include it in the chili.

"If a family wants to eat exotic foods, they can do so on their own time - not at school", Williams wrote.

'We will not be serving food of this nature again.

Potter-Dix students got a taste of exotic meat in a meal last week.

Kangaroo meat can be bought in most major supermarket chains in Australia, often in the form of fillets, steaks, or kangaroo sausages called "Kanga Bagas".
